1 In a large work bowl, combine the pickled herring with the julienned-carrot, zucchini, red pepper, and green onion; season lightly with salt and pepper. 2 In a separate bowl, combine remaining ingredients and whisk to combine. 3 Cut out 4 rounds of parchment paper into 10” circles. Place the herring mixture in the center of each round distributing it evenly among the 4 rounds. 4 Pour 2 oz of the sauce into each round and fold it over on itself, pinching the edges together to form a pocket. 5 Place the pockets on a sheet-tray and bake at 375°F until vegetables are cooked through, about 8-10 minutes. Open the pockets at the table when ready to serve along with lettuce leaves.
