Latkes with Southern Spices

Ingredients

  • 1 pound Russet potatoes peeled and grated
  • 1 egg lightly beaten 
  • 2 tablespoons flour
  • ½  teaspoon salt
  • 1½  teaspoons Cajun seasoning
  • ⅓ cup grated onion
  • ¼  cup grated celery
  • ¼  cup grated green pepper 
  • Extra virgin olive oil for frying

Instructions

  • Squeeze shredded potatoes using a paper towel or kitchen towels. Immediately mix with remaining ingredients.
  • Fill frying pan with ½-inch layer of oil. Heat frying pan on medium-high heat.
  • Using a ¼ cup measuring cup, scoop out latke mixture and place in hot oil.
  • Fry 2-3 minutes per side.
  • Serve with various toppings and condiments.
