1 ½cupswater or vegetable broth

3tablespoonshoneyor brown sugar
3tablespoonsapple cider vinegaror red wine vinegar

½teaspoonsmoked paprikaoptional, for depth
¼teaspoonred pepper flakesoptional, for a little heat
Instructions
1. Sear the Cabbage
Heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium-high heat. Sear the cabbage wedges for 2-3 minutes per side until lightly browned. Remove and set aside.
2. Build the Sweet & Sour Sauce
In the same pot, sauté the onion over medium heat until soft, about 5 minutes. Add the garlic and cook for 30 seconds. Stir in tomato paste, crushed tomatoes, water (or broth), honey, vinegar, salt, pepper, paprika, and red pepper flakes. Let it simmer for 5 minutes to blend the flavors.
3. Braise Until Melted
Nestle the cabbage wedges back into the pot, spooning some sauce over them. Cover, reduce heat to low, and simmer for 45-60 minutes, turning occasionally, until the cabbage is soft, tender, and infused with flavor.
4. Serve & Enjoy
Spoon extra sauce over the cabbage before serving. Enjoy as a simple, flavorful side dish with your favorite mains.

*If you can find bug free cabbage in your local kosher market you can follow it this way. If your cabbage needs to be checked for bugs you may need to remove the core and cut into wedges, it's okay if they don't stay intact.
