Preheat oven to 350 degrees F.
Line a 9-inch cake pan with parchment paper.
Using the whisk attachment, beat the eggs and sugar to a ribbon stage.
In a separate bowl, combine the wet ingredients: wine, lemon juice and zest, and olive oil. Add vanilla bean.
In another bowl, combine the dry ingredients: flour, baking soda, baking powder and salt. Whisk together.
With a mixer running on low, add one-third of the dry mixture to the beaten eggs, then add one-third of the wet mixture, and continue in this manner until all ingredients are mixed together.
Be careful not to over-beat the cake, or it will be tough.
Pour into the prepared cake pan and bake at 350 degrees for 30 to 35 minutes, until the top springs back lightly.
Cool for two hours and dust with powdered sugar before serving.
