White Chocolate Fig Hamantashen

Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 2 tablespoons vanilla
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 5 1/2 cups flour
  • 1 cup dried figs chopped
  • 4 cups walnuts chopped
  • 1 cup sugar
  • 3 tablespoons water
  • 2 tablespoons heavy cream

Instructions

  • Fig Hamantashen Dough:
  • Beat eggs, and add sugar, oil, vanilla, baking powder, salt, and gradually add flour. Mix in figs. 
  • Roll flat on a lightly floured surface and cut into circles.
  • Caramelized Walnut Filling:
  • Heat sugar and water over a light flame until sugar is fully dissolved and begins to brown. Add heavy cream and walnuts, and mix. 
  • Place a spoonful of filling in the middle of the circles and pinch to form the hamentash shape. 
  • Bake at 350°F for 15-20 minutes or until edges begin to brown. 
  • Cool. Melt white chocolate to drizzle.
