Baked Polenta Fries

Ingredients

  • 4 cup water broth or milk of choice (or a combination)
  • 1 1/2 cup polenta cornmeal
  • 1 teaspoon salt
  • 1/2 cup parmesan cheese or mixture of chopped fresh herbs or chopped sun dried tomatoes or olives
  • 1/4 cup olive oil

Instructions

  • Bring the liquid of choice just to a boil in a large saucepan. Slowly stream in the polenta while stirring constantly with a whisk. Stir in the salt and turn down the heat a bit if needed (you don't want the polenta to burn). Continue stirring until the polenta thickens up, then stir in your flavoring of choice, herbs, parmesan, olives, sun-dried tomatoes or anything you desire.
  • Remove from heat and spread out in a baking sheet or casserole with a spatula.  Place in refrigerator for at least an hour or it can be prepared in advance and left overnight.
  • Cut out sticks in the shape of french fries or however you like.  Coat with a little oil and sprinkle with a little salt.
  • Bake in a 450 degree oven, for 20-40 minutes or until golden and crispy. Flip the fries once after fifteen minutes.
