Baked Polenta Fries

You can make these baked polenta fries either with your own homemade polenta (my preference) or with one of those prepared tubes you can find at most Supermarkets these days. Here I give you the recipe to make it from your polenta so that you can add any flavorings you like to the mix before it firms up. Herbs and Parmesan cheese are really good, pesto is wonderful too. They make great finger food for an anytime snack or a party. Serve with a homemade ketchup or any other dipping sauce of choice.

Ingredients

  • 4 cup water broth or milk of choice (or a combination)
  • 1 1/2 cup polenta cornmeal
  • 1 teaspoon salt
  • 1/2 cup parmesan cheese or mixture of chopped fresh herbs or chopped sun dried tomatoes or olives
  • 1/4 cup olive oil

Instructions

  • Bring the liquid of choice just to a boil in a large saucepan. Slowly stream in the polenta while stirring constantly with a whisk. Stir in the salt and turn down the heat a bit if needed (you don’t want the polenta to burn). Continue stirring until the polenta thickens up, then stir in your flavoring of choice, herbs, parmesan, olives, sun-dried tomatoes or anything you desire.
  • Remove from heat and spread out in a baking sheet or casserole with a spatula.  Place in refrigerator for at least an hour or it can be prepared in advance and left overnight.
  • Cut out sticks in the shape of french fries or however you like.  Coat with a little oil and sprinkle with a little salt.
  • Bake in a 450 degree oven, for 20-40 minutes or until golden and crispy. Flip the fries once after fifteen minutes.
