Preheat oven to 350°F. Spray 2 soaked cedar planks with nonstick cooking spray and place in the oven while preheating.
In a small bowl, mix together Cajun seasoning and brown sugar until well combined.
Lightly sprinkle and rub salmon fillets with seasoning mixture.
Carefully place prepared salmon skin-side down onto preheated cedar planks. Return to oven and bake for 15 to 20 minutes, until salmon flakes easily with a fork.
Remove salmon from the oven and serve warm with lemon wedges and your favorite vegetables.
