Ingredients

  • 4 Green Anjou pears peeled, cored and sliced
  • 3 egg whites
  • 2 egg yolks beaten
  • 1 unbaked pie crust
  • 2/3 cup Sugar
  • 1/3 cup milk
  • 6 tablespoons Sugar
  • 2 tablespoons Lemon juice
  • 2 tablespoons flour
  • 1 teaspoon lemon peel grated, 1/4 teaspoon vanilla

Preparation

  • 1 Preheat oven to 400°F. Beat 2/3 cup sugar with flour, milk, egg yolks and lemon peel until smooth.2 Toss pear slices with lemon juice in a large bowl. Pour milk mixture over and mix until pears are well coated.3 Pour into pie crust, cover the edges with foil and bake inside oven for 20 minutes or until pears are tender. 4 In a medium bowl, beat egg whites with vanilla using an electric beater on medium speed until foamy.5 Gradually add 6 tablespoons sugar, one tablespoon at a time. 6 Beat on high speed after each addition until sugar is completely dissolved. 7 Spread meringue mixture over pear filling in pie and bake inside oven at 350°F until top is golden brown. Set pie aside to cool.
