Green Anjou Meringue Pie

Ingredients
- 4 Green Anjou pears, peeled, cored and sliced
- 3 egg whites
- 2 egg yolks, beaten
- 1 unbaked pie crust
- 2/3 cup Sugar
- 1/3 cup milk
- 6 tablespoons Sugar
- 2 tablespoons Lemon juice
- 2 tablespoons flour
- 1 teaspoon lemon peel, grated, 1/4 teaspoon vanilla

Preparation
1 Preheat oven to 400°F. Beat 2/3 cup sugar with flour, milk, egg yolks and lemon peel until smooth.
2 Toss pear slices with lemon juice in a large bowl. Pour milk mixture over and mix until pears are well coated.
3 Pour into pie crust, cover the edges with foil and bake inside oven for 20 minutes or until pears are tender.
4 In a medium bowl, beat egg whites with vanilla using an electric beater on medium speed until foamy.
5 Gradually add 6 tablespoons sugar, one tablespoon at a time.
6 Beat on high speed after each addition until sugar is completely dissolved.
7 Spread meringue mixture over pear filling in pie and bake inside oven at 350°F until top is golden brown. Set pie aside to cool.
