Mike and Ike Lemonade Biscotti

Ingredients

  • Vegetable cooking spray
  • 1/2 cup vegetable or canola oil
  • 1/2 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg lightly beaten
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • zest from 1 lemon
  • 1/2 cup Lemonade Mike and Ike cut in half

Instructions

  • Preheat oven to 350F. Coat 1 baking sheets with cooking spray.
  • Combine oil, sugar, and brown sugar in a large bowl, mix well. Stir in egg and lemon juice.
  • Add flour, baking soda, lemon zest and salt and blend well. Fold in Mike and Ikes.
  • Form dough on the baking sheet into 1 large rectangle, about 10 inches wide.
  • Bake for 20 to 30 minutes, checking after 20 minutes, or until edges are golden brown.
  • Cool 5 minutes; cut while slightly warm into sticks, place cut side up and bake for about 10 minutes.
  • Note: you could turn them over and bake them on the other side for extra crispy biscotti but it will cause the candies to get a little harder.
