Mike and Ike Lemonade Biscotti

My brother and I came up with this recipe together. He loves candy and wanted to use the Lemonade Mike and Ikes we had in a dessert. We decided on this biscotti because it is easy to make and they came out really delicious.

  • Vegetable cooking spray
  • 1/2 cup vegetable or canola oil
  • 1/2 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg, lightly beaten
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • zest from 1 lemon
  • 1/2 cup Lemonade Mike and Ike, cut in half


Preheat oven to 350F. Coat 1 baking sheets with cooking spray.

Combine oil, sugar, and brown sugar in a large bowl, mix well. Stir in egg and lemon juice.

Add flour, baking soda, lemon zest and salt and blend well. Fold in Mike and Ikes.

Form dough on the baking sheet into 1 large rectangle, about 10 inches wide.

Bake for 20 to 30 minutes, checking after 20 minutes, or until edges are golden brown.

Cool 5 minutes; cut while slightly warm into sticks, place cut side up and bake for about 10 minutes.

Note: you could turn them over and bake them on the other side for extra crispy biscotti but it will cause the candies to get a little harder.
