Preheat oven to 350°F. Slice off top quarter of a large bulb of garlic and place on a large piece of aluminum foil. Drizzle with one tablespoon canola oil. Seal tightly with another piece of aluminum foil and roast for 30 minutes.
Allow to cool and pop out garlic cloves; they will be smooth and creamy.
Add remaining ingredients to roasted garlic and combine.
Tip: Add a spoonful of honey or agave nectar if you like your condiments sweet.
