In this Roasted Galic Dijonnaise recipe, the sweet caramelization of slow roasted garlic mixed with a careful balance of mayo and mustard makes a pantry classic.

- 1 head garlic, roasted
- ½ cup mayonnaise
- ¼ cup Dijon mustard
- Salt and pepper, to taste
1. Preheat oven to 350°F. Slice off top quarter of a large bulb of garlic and place on a large piece of aluminum foil. Drizzle with one tablespoon canola oil. Seal tightly with another piece of aluminum foil and roast for 30 minutes.
2. Allow to cool and pop out garlic cloves; they will be smooth and creamy.
3. Add remaining ingredients to roasted garlic and combine.
Tip: Add a spoonful of honey or agave nectar if you like your condiments sweet.
