Sesame Soy Salmon

Ingredients

  • Two 4-5oz salmon filets
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 2 cloves garlic grated
  • 1 tbsp grated ginger
  • 1 tsp sesame seeds toasted
  • 2 tsp peanuts toasted
  • 2 whole scallions chopped

Instructions

  • Whisk soy sauce, sesame oil and rice wine vinegar to combine
  • Using a microplane or box grater, grate the garlic and ginger and add to the soy mixture to create a marinade
  • Coat the fish in the marinade
  • Place the fish in the refrigerator, covered, from 2-4 hours up to 12 hours
  • Place the fish and remaining marinade in an oven safe skillet or on a baking sheet
  • Roast the fish in an oven preheated to 375 degrees for 12-15 minutes, or until the  fish is cooked to your liking
  • Toast the peanuts and sesame seeds over low heat until just golden brown
  • Plate with fish, garnish with peanuts, sesame seeds and scallions, serve with your favorite green vegetable or seasoned slaw.
