Wild Mushroom Israeli Couscous

Ingredients

  • 1 cup uncooked Israeli couscous
  • 2 cups chicken broth or 2 TBSP parve chicken powder dissolved in 2 cups boiling water
  • 1/4 lb fresh shitake mushrooms rinsed and dried. Remove stems and slice caps.
  • 1/4 lb fresh oyster mushrooms rinsed and dried. Remove stems and slice caps.
  • 1/4 lb fresh cremini mushrooms rinsed and dried. Remove stems and slice caps.
  • Sea Salt and freshly ground pepper to taste
  • 3 1/2 Tbsp Extra virgin olive oil

Preparation

  • 1 Heat 1 1/2 TBSP olive oil in a medium saute pan. 2 Add sliced mushrooms and saute on medium heat until lightly browned. Remove to a bowl with juices.3 Heat remaining 2 TBSP olive oil in large saute pan.4 Add Israeli couscous and saute on medium heat until golden. Watch carefully so it does not burn.5 Pour in chicken broth or parve chicken powder mixture and stir well.6 Cover and simmer for 10 minutes.7 Add mushrooms and their juices. Stir well.8 Cover and simmer another 10 minutes or until liquid is evaporated. 9 Season with salt and pepper.
