Wild Mushroom Israeli Couscous
Easy and elegant side dish to accompany poultry, meat or fish. Can be made parve or fleish.

Ingredients
- 1 cup uncooked Israeli couscous
- 2 cups chicken broth or 2 TBSP parve chicken powder dissolved in 2 cups boiling water
- 1/4 lb fresh shitake mushrooms, rinsed and dried. Remove stems and slice caps.
- 1/4 lb fresh oyster mushrooms, rinsed and dried. Remove stems and slice caps.
- 1/4 lb fresh cremini mushrooms, rinsed and dried. Remove stems and slice caps.
- Sea Salt and freshly ground pepper to taste
- 3 1/2 Tbsp Extra virgin olive oil

Preparation
1 Heat 1 1/2 TBSP olive oil in a medium saute pan.
2 Add sliced mushrooms and saute on medium heat until lightly browned. Remove to a bowl with juices.
3 Heat remaining 2 TBSP olive oil in large saute pan.
4 Add Israeli couscous and saute on medium heat until golden. Watch carefully so it does not burn.
5 Pour in chicken broth or parve chicken powder mixture and stir well.
6 Cover and simmer for 10 minutes.
7 Add mushrooms and their juices. Stir well.
8 Cover and simmer another 10 minutes or until liquid is evaporated.
9 Season with salt and pepper.
