Wild Rice and Chicken Slow Cooker Casserole

Ingredients

  • Chicken bottoms thigh and legs (about 3 pounds)
  • Juice of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 medium onion chopped
  • 8 ounces mushrooms sliced
  • ½ cup raw wild rice
  • 1 ½ cups raw grain of choice brown rice, red rice or bulgur
  • ¼ cup homemade onion soup mix 
  • 1 quart chicken broth
  • 1 tablespoon turmeric
  • 2 teaspoons coconut sugar
  • 1 teaspoon celery seed
  • 1 tablespoon dried parsley
  • cup minced onion
  • 2 teaspoons onion powder
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Place chicken in a sealable plastic bag.
  • Add lemon juice, mustard, garlic, oil, salt, and pepper.
  • Seal and shake to coat chicken. Set aside.
  • In a slow cooker layer onions, mushrooms, wild rice, and grains of choice.
  • Add homemade onion soup mix.
  • Add broth to cover.
  • Top with chicken and all marinade from the bag.
  • Sprinkle with remaining 1 teaspoon turmeric.
  • Cover and cook on low for 8 hours.
  • Note: To make this in the oven or on the stove, follow the same directions to place all rice and onions on the bottom and top with chicken. Cover and either cook on stove top for 2-3 hours or in a tin in the oven for 1-2 hours at 350.
