Wild rice is a good source of magnesium, phosphorus, zinc and vitamin B6. Enjoy this one-pot casserole that can be made in the slow cooker.
We like to use our own onion soup mix to flavor this recipe, prepare the mixture per ingredients below and feel free to double or triple to save for other recipes.

Wild Rice and Chicken Slow Cooker Casserole
Servings
Ingredients
- Chicken bottoms thigh and legs (about 3 pounds)
- Juice of 1 lemon
- 1 tablespoon Dijon mustard
- 1 clove garlic minced
- 1 tablespoon extra virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 medium onion chopped
- 8 ounces mushrooms sliced
- ½ cup raw wild rice
- 1 ½ cups raw grain of choice brown rice, red rice or bulgur
- ¼ cup homemade onion soup mix
- 1 quart chicken broth
- 1 tablespoon turmeric
- 2 teaspoons coconut sugar
- 1 teaspoon celery seed
- 1 tablespoon dried parsley
- ⅓ cup minced onion
- 2 teaspoons onion powder
- 2 teaspoons kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Place chicken in a sealable plastic bag.
- Add lemon juice, mustard, garlic, oil, salt, and pepper.
- Seal and shake to coat chicken. Set aside.
- In a slow cooker layer onions, mushrooms, wild rice, and grains of choice.
- Add homemade onion soup mix.
- Add broth to cover.
- Top with chicken and all marinade from the bag.
- Sprinkle with remaining 1 teaspoon turmeric.
- Cover and cook on low for 8 hours.
- Note: To make this in the oven or on the stove, follow the same directions to place all rice and onions on the bottom and top with chicken. Cover and either cook on stove top for 2-3 hours or in a tin in the oven for 1-2 hours at 350.











You can adapt it to an instant pot probably you can follow the instructions and just set to cook with pressure for about 1 hour but I can’t say for sure how long.

What size slow cooker do you recommend for this recipe?
We removed celery from the final recipe, obviously you can add it if you like. We like to keep the number of ingredients down.
You have “add celery” on your directions but no celery in the ingrediants?
What can I substitute for the coconut sugar? And where does the teaspoon of turmeric come from to sprinkle on the chicken? The ingredients only shows turmeric for the dry soup mixture.
The recipe mentions celery, but celery isn’t listed in the ingredient list. Please clarify
Thanks for pointing that out, you are supposed to make the onion soup mix and then use it in the dish, I fixed the instructions.

I am confused by the instructions. The recipe calls for 1/4 c. onion soup mix. the instructions calls for 1 tbsp. turmeric and the rest of the soup mix ingredients. Could you please clarify.
Came out nice. Was confused by the homemade onion soup mix instructions. First the ingredient list says 1/4 cup of the mix but in the instructions later it says 1 tablespoon with the turmeric split with an additional teaspoon. I just guessed at measurements in the end.
