A Lighter Shavuot

Hi everyone, well Shavuot is around the corner and this year we have another 3 day (six meals) Yom Tov and in Israel 2 day, which for those in Israel is a “mouthful”.

Once again we need to stress that Yom Tov and Shabbos should not be a time for “fressing”.  Yes, it is nice to prepare beautiful, tasty and gourmet food especially lekovod shabbos and Yom Tov, but the focus for this very special day is not cheese cake, chocolate, etc.

There is a reason that HaShem provided us with manna.  It was nutritionally sound and efficient.  This should be one of our goals, not out doing our friends and/or neighbors to see who can prepare the most food and the most calorie laden dishes.

Certainly with so many meals to deal with, wherever we can cut a bit will be helpful.  We are happy to provide our delicious EnLITEned Cheese Cake and Blintzes.  For the cheese cake you can prepare a combination of ground nuts mixed with cinnamon, vanilla and some splenda, and sprinkle liberally on the bottom of the pan before putting in the filling, or mix with some lite margarine, pat it down and bake for 5-7 minutes and then add the filling and continue.

For the Blintzes, we have given a choice of many fillings, use your imagination– it doesn’t have to be just cheese and/or potato.  On the side, serve some home made applesauce and mix some leben or lite sour cream with sweetener, vanilla flavoring and a sprinkle of cinnamon and everyone will be satisfied and thrilled to have such a tasty dish while saving so many calories, fat and carbs.
