Asian Chicken Salad

Asian Chicken Salad

I feel I now have a second home in Skokie, Illinois. When I went to do an event there for the Skokie Kollel, last Monday, I was given the warmest welcome I’ve ever had. The women of the entire community packed into the beautiful kollel building. I totally enjoyed working with the rabbis who run the kollel as well as Tami & Barbra, the pair that chaired the event. They were fantastic and we have become fast friends. My assistants for food prep were Sharon Matten (a culinary celeb in her own right), Debbie and Rebbetzin Rosenberg. We worked so well together! All150 women who attended enjoyed a superb tasting, if I do say so myself and couldn’t stop thanking me. I was blown away by their intense appreciation. I’ve been in a lot of places, folks, but I have never experienced anything like this. Listen, when your day starts at 3:30 am to catch a flight, and you spend the whole day cooking, preparing and doing a program until 10:30 pm, you really relish a word of thanks.

So you want to know what I served that evoked such praise? You can check out the entire menu here, but one of the stars was one of my favorite recipes from my new book, Quick & Kosher Meals in Minutes– Asian Chicken Salad — which was developed around a bottled dressing that I particularly like. That’s a huge stretch for me because I don’t go for most bottled dressings. But Asian Carrot Ginger from Wafu is different.

Apparently, it’s the best-selling dressing in Canada. Who new Canadians had such good taste? (Just kidding, just kidding.) Unfortunately it’s not distributed widely in the US. So we called up Wafu and asked them to gift a case to one lucky winner. If you happen to be unlucky and don’t win this contest – you can use a recipe I created for homemade Asian Carrot Ginger Dressing. If you still want a shortcut (which I totally understand), you can pick up any other Asian style dressing, ginger or tamari, or peanut Thai in a bottle and it will still work wonderfully with this recipe. Believe me, I have tried them all.

So thanks Skokie, thanks Wafu and thanks to all my new friends – may we continue to enjoy Asian Chicken Salad and other wonderful goodies together!

***CONTEST DETAILS*** For your chance to win a case of assorted Wafu Dressings (Kosher Certification is the MK) please leave a comment below telling us your favorite Kosher Asian Dish. One winner will be chosen at random from qualified entries. Contest ends Friday June 10 2011 at 9 am EST. Contest is open to Canadian and US Residents only.

CONTEST EXTENDED UNTIL 9 AM EST MONDAY JUNE 13 2011

We have several favorite dishes: stir fried chicken or beef with veggies and nuts. Chicken soup broth with blanched veggies and hot pepper to taste. I used to make wonderful vegetarian egg rolls that everyone loved- till I lost my cookbook.

My favorite dishes can be kosher but normally don’t come as such with the exception of Tofu Pad Woon Sen. Others are crispy duck curry, any type of Pho really, Panang curry, and sushi of any type with a good sashimi sauce. Sadly Asian is a little misleading and a coverall for so many different types of food I could almost go on forever with all of the delicious things I adore from different cultures. B”H!

Jamie thank you very much for this chance to win an awesome prize. As for a favorite Asian dish, my family would vote for the Japanese chicken I make called Mizutaki. I use the recipe in The New York Times Cookbook by Craig Claiborne. To maintain Kashru, I substitute a dry sherry for sake and I do not use monosodium glutamate. Now I know what I hope to prepare for this Shabbos!

I made fried rice to go with the chicken for last Shabbos night, and it was gobbled up pronto. I hadn’t made it in a long time, so I think we especially enjoyed it. (Is this a more American than Asian dish? It definitely has Asian overtones.)

Jamie, you are so sweet! I really enjoyed meeting you at that event, and was excited to get a picture with you (i.e. the new-age autograph). The food was great, and the next day I made the tofu with soba noodles dish. I already had both of your books, but for some reason, I was afraid to make tofu. It turned out great. Thank you for the great recipes and a fun time with my mother and mother in law.

My favorite Asian dish is Mongolian Beef. Back before I kept kosher, this was my favorite, and the best (kosher) version I had was in Atlanta when I did USY on Wheels. Maybe I’ll try to make it myself someday.

First of all, I enjoyed this article. The gratitude expressed by the Skokie residents says a lot about their character.

My favorite kosher asian dish is Chicken and Noodles with Teriyaki sauce. I love the Veri Veri Teriyaki sauce by Soy Vay Enterprises. It’s an all natural garlic asian sauce that is delicious and loaded with sesame seeds.

To prepare the dish I cut boneless chicken thighs in strips and marinate them in a little of the teriyaki sauce for about 30 minutes. I then drain off the sauce and sear the strips in hot oil. Once the chicken strips are done, I add the teriyaki sauce and deglaze the pan. I serve this mixture over whole wheat linguine with diced green onions and more sesame seeds.
