
When I hear the word “Fricassee” I am reminded of my mother’s concoction of pipicks, wings, and mini meatballs in a sweet and sour sauce. I would only eat the meatballs served over rice, I never touched the other stuff no matter how my mother pleaded. Fricassee (in its true sense) is something I would never imagine myself cooking.
I have been putting off this recipe until I no longer could. I have a very bad relationship with ground poultry, meaning I don’t use it EVER! I am sure it has happened to everyone. You know, that one time when you were a kid and you tasted something so gross that you can never bring yourself to try it again no matter how many years have past?! You totally know what I am talking about! So even though the Fricassee Sloppy Joe “dressed down” version called for ground chicken, I couldn’t bring myself to use it, I used ground beef instead.
To me, Sloppy Joes means a can of Manwich and hamburger buns. This version was surely a few levels up from that! The ground meat, peppers, onions, garlic, mushrooms, with marinara sauce piled high on a Ciabatta bun was really delicious! These familiar, family friendly flavors were a huge hit with our 6 year old, and we enjoyed too!
