Sweet and sour meatballs

Ingredients

  • 1 pound lean ground beef
  • .75 cup celery minced
  • .25 cup almonds chopped
  • 1 garlic clove peeled and minced
  • 1 teaspoon salt
  • .25 cup soft bread crumbs
  • 1 teaspoon soy sauce
  • 2 large eggs slightly beaten
  • .5 teaspoon pepper
  • vegetable oil
  • 1 cup chicken stock
  • .5 cup sugar
  • 3 tablespoon cornstarch
  • .5 cup pineapple juice reserved from pineapple chunks
  • .5 cup vinegar
  • 2 tablespoon soy sauce
  • 1 green bell pepper seeded and chopped
  • 8 ounce can of pineapple chunks

Instructions

  • In a large bowl, thoroughly mix the ground beef, celery, almonds, garlic, salt, bread crumbs, soy sauce, eggs, and pepper. Form into small meatballs. Brown meatballs in oil. Drain cooked meatballs on a paper towel.
  • In a saucepan, add chicken stock, sugar, cornstarch, pineapple juice, vinegar, and soy sauce. Over medium heat, stir for 3 minutes or until thickened. Add green pepper, pineapple chunks, and meatballs. Simmer for 15 minutes.
