Emma Shulevitz is owner and chef at 7 Layer Catering in Rockville, MD. 7 Layer Catering is a kosher vegan catering service operating out of Potomac 18. 7 Layer aims to increase awareness of kosher vegan food and to provide delicious meals in hotels, on airplanes, in schools, hospitals, and cafeterias. Emma believes that we should eat the way we would like to be treated. She left a job in defense to start 7 Layer. When she was 14 years old, she stumbled upon a turkey slaughterhouse. This experience led her to explore animal rights and the vegan movement in Tel Aviv.
