
Gingerbread Loaf

Ingredients
- 1 1/2 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoon ground ginger
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/3 cup vegetable oil
- 1/2 cup brown sugar firmly packed
- 1 egg well beaten
- 1/2 cup molasses
- 1/2 cup boiling water
- 3 tablespoon crystallized ginger chopped
Instructions
- Preheat oven to 350 degrees.
- Combine dry ingredients. Make a well in the center of the flour mixture and add the oil, then brown sugar, then the egg. Mix the molasses and boiling water and add to the batter. Mix until just combined. Add crystallized ginger and lightly stir.
- Pour batter in to greased 8 inch loaf pan and bake in oven for 35-45 minutes. Insert a toothpick in to the center of the gingerbread to make sure it comes out clean.
- Let cool for at least 10 minutes before removing from the pan.











Molasses and candied ginger are not easily available in Israel. Any suggestions what can substitute for them?
Can you use regular white sugar if you cant find packed brown sugar? can you also substitute honey for the mollasses? can you substutute ground ginger for the crystalized? or will all three of theses changes change thetexture and tatse dramatically?
