Servings

Ingredients

  • 2 lbs ground beef
  • little oil for frying
  • 2 medium onions finely grated
  • 1 large carrot finely grated
  • 1 heaped tsp crushed garlic
  • 1/2 cup red wine optional
  • 14.5 oz tin chopped tomatoes
  • 2 cups beef stock 2 beef stock cubes dissolved in 2 cups water
  • 1 oz finely chopped fresh basil leaves
  • 1/2 cup sun-dried tomato sauce or finely chopped sun dried tomatoes
  • 1 x 4 oz can tomato paste
  • 1 Tbl brown sugar
  • 1 Tbl cornstarch dissolved in 3/4 cup cold water
  • 1 tsp dried Italian herbs
  • 1 tsp salt
  • little crushed black pepper

Instructions

  • Fry the ground beef in a little oil, stirring continuously until golden brown. If you don’t stir it while it’s cooking it may go a little ‘clumpy and lumpy’.
  • Once lightly browned add onions, carrot and garlic and continue to cook on medium to high heat.
  • If you’re using wine, add it now and leave it to simmer for a few minutes.
  • Add the can of tomatoes, beef stock and basil, reduce the heat and simmer, covered, on low for about 10 minutes.
  • Add the rest of the ingredients and simmer for a further 10 minutes, stirring every now and then.  The water and cornstarch seem to bring everything together! Serve on spaghetti or your favorite pasta.
