Mayonnaise-Herb Vinaigrette

Ingredients

  • 1/2 cup olive oil or vegetable oil
  • 3 tablespoons mayonnaise
  • 3 tablespoons wine vinegar or lemon juice
  • 1 tablespoon chopped fresh herbs
  • salt and freshly ground black pepper to taste

Instructions

  • Whisk the olive oil, mayonnaise, vinegar, herbs and salt and pepper to taste until well blended. Makes nearly one cup.

    Depends on what I am using this for. If for chicken salad, for example, I might add dill or tarragon. If for fish, maybe tarragon or thyme. For veggies maybe thyme, oregano, marjoram, parsley, chives, savory or a mixture of anything I have leftover in the fridge. For pasta, any of the above. Use the ones that appeal to you.
