Mommy’s Ramen Noodles

Ingredients

  • 3 oz Chinese style dried thin egg noodles lo mein
  • 1/3 cup frozen peas
  • 1 tablespoon sunflower oil
  • 1/2 onion thinly sliced
  • 1 small clove garlic crushed
  • 1 1/2 teaspoons soy sauce
  • 3 oz cooked chicken shredded
  • 1/3 cup canned sweet corn
  • 1/2 cup chicken broth
  • 1/2 teaspoon cornstarch

Instructions

  • Cook the noodles according to the packet instructions and add the peas two minutes before the end of the cooking time.
  • Meanwhile, heat the oil in a pan and sauté the onion and garlic for 3 minutes. Stir in the soy sauce, chicken and sweet corn.
  • Strain the noodles and peas and add to the pan.
  • Pour the chicken broth into the pan.
  • In a small cup mix the cornstarch with 1 teaspoon of cold water and add this to the pan. Bring to the boil and cook for one minute, stirring.

    Made this for supper last night, it was great wouldn’t change anything except maybe more chicken. I had chicken from the soup also a piece that was broiled used both. Another great way to use left over chicken. YAY

    We loved this; very delish! I didn’t have cooked chicken; but, I did have a chicken cutlet which I cut into small pieces and cooked with the onion and garlic. We also, added a drop more soy sauce. Can not wait to make this again!!!

    There already is shredded cooked chicken in the recipe.

    to make this into a meal i would add shredded or diced chicken
