Simple Salmon

I am the Balabusta next door in the Rosh Hashanah issue of the Joy of Kosher with Jamie Geller magazine. I had one recipe that I had to share that they couldn’t fit and here it is, so easy and delicious.

Neshe’s Simple Salmon

4 Servings

Ingredients

  • 1½ pound salmon fillet
  • 1 tablespoon light olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce

Instructions

  • Preheat oven to 350°F.  Line a glass baking pan with parchment paper to prevent the sauce from burning.
  • Place fish, skin-side down, in the prepared pan.
  • In a small bowl, combine oil, honey, and soy sauce. Pour over fish and turn the skin-side up, to keep the moisture in.
  • Bake for 30 minutes, or until fish flakes easily with a fork.

    I add a teaspoon of grated ginger and a minced clove of garlic to give it extra zing. And you can marinate it in this mixture for about half an hour for better flavor. Warning- do not marinate longer than 30 minutes in soy sauce marinades because the salt in soy sauce starts to “cook” the salmon.

    Does it have to be with salmon or can it work with anothertype of fish also, like tilapia or flounder?
