Homemade hummus is easy to make and worth every second. This version uses roasted garlic, oh yeah and don’t forget to make your own pita chips, best way to use day old pita.

Roasted Garlic Hummus with Oven Baked Pita
Servings
Ingredients
- 8 cloves garlic
- 1/2 cup extra virgin olive oil
- 2 15-ounce cans garbanzo beans, rinsed and drained
- 1/4 cup tahini
- 2 teaspoons ground cumin
- 2 tablespoons Lemon juice
- 1 teaspoon Kosher salt
- freshly ground black pepper
- 4 pitas split in half
Instructions
- In a small saucepan, combine garlic and oil. Heat over medium low heat for 4 to 6 minutes or until golden brown and slightly softened. Let cool slightly.
- In a food processor, combine beans, tahini, cumin, lemon juice, salt and pepper and pulse to chop. With food processor running, add garlic and olive oil and puree until smooth. Add a few tablespoons of water if hummus is too thick.
- Cut split pitas into quarters and place in a single layer on sheet pan. Spray with cooking spray and broil for 4 minutes or until golden brown and crisp. Serve warm with hummus.

Hi Shaindel should be about 4 cups… I actually have never frozen hummus but found this guide online for “How to Freeze Hummus” for you: http://bit.ly/1cMRSxY
How much does this recipe make? Can I freeze the extra?
Thanks for the catch I actually think it is 2 tsp (to be honest I posted this a while ago…) it is 2 (15- ounce) cans of chickpeas + 8 cloves garlic + 1/4 cup tahini.
oh Mary!!! so happy you found us, enJOY!
2 tablespoons of cumin? Far too much I would think. Did you mean 2 teaspoons? that’s also a lot.
Thank you for the recipes. I will definately get my groceries soon and try them. I am into vegetarian cooking and this type of food is what
I love.
Thank you,
Mary

Jamie, this looks delicious! Do you slice or mince the garlic in any way before heating in the pan?
