Pareve Snickers Cheesecake

This Pareve Snickers Cheesecake is so decadent and creamy, you won’t believe it’s non-dairy!  You can make this dessert in a round cake pan, but if you want to seamlessly remove the cake a spring form pan is required. 

This Parve Snickers Cheesecake is so delicious whether you keep it parve or make it dairy it comes out amazing every time and also keeps in the fridge for up to 5 days. Before serving drizzle with caramel and chocolate sauce, top with peanuts and voila!!

Ingredients

  • 1 ⅓ cups crushed chocolate graham crackers
  • ⅓ cup granulated sugar
  • Pinch kosher salt
  • 5 tablespoons vegan butter melted and cooled
  • 2 8-oz. containers cream cheese alternative
  • 1 14-oz. package silken tofu, drained
  • 1 cup powdered sugar
  • 1/2 cup corn starch
  • 1/3 cup plain soy or nut milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • ¼ cup chocolate sauce
  • ¼ cup caramel sauce
  • ⅓ cup roasted peanuts coarsely chopped

Instructions

  • Preheat oven to 350°F. Grease the bottom and sides of a 12-inch spring form pan.
  • In a medium bowl, combine crackers, sugar, salt and margarine and stir until mixture comes together. Press into an even layer in the pan and bake for 10 minutes. Cool completely. Reduce oven to 325°F.
  • In the bowl of a stand mixer fitted with a paddle attachment mix together cream cheese alternative and tofu until combined. Add sugar, corn starch and soy milk and beat well. Add eggs and vanilla and mix until smooth and combined.
  • Pour over cooled crust and bake 1 hour and 30 minutes or until cheesecake is golden brown and set in the middle. Cool completely before unmolding from pan and refrigerate for at least 6 hours or overnight.
  • To serve, drizzle with chocolate and caramel sauce and sprinkle with peanuts. Cut into 12 slices and serve.

      You can use butter and real brick cream cheese. You can keep the tofu or use more cream cheese.

    Made this for Shavuot meal. This was amazing. Topped it with cookie butter melted instead of chocolate. Was absolutely gorgeous and delicious. Nobody could believe it was no dairy.

    dulce do leche is leche, that’s the problem…it is, if you’re trying to make it pareve. there’s lotus, but that’s not really a sauce.

      Right, I thought I have seen a fake, non dairy dulce de leche, but I could be mistaken. I would look in one of those dessert supply stores. The usually sell all the fancy cupcake liners and meringue shells etc. and they might have some kind of non dairy sauce that mimics caramel.

    I don’t have any info on where they are in Israel, but they do have lots of sauces here dairy and parve. You can try a Dulce de leche type sauce for the caramel.

    yes silken tofu exists in israel. go to any health food store, like eden teva or teva kastel

    SarahEats – you can always drizzle choc, caramel and peanuts over your favorite classic dairy version too. And you can steal this crust recipe and just sub in butter!
