Baked Parmesan Latkes

These latkes are egg free and baked, but the Parmesan cheese helps them stick together and gives all the amazing flavor. You will love this take on the classic potato pancake.

  • 1 large potato
  • 1 cup coarsely grated parmesan cheese
  • 2 sprigs thyme, chopped


Preheat oven to 400℉. 

1. Peel and grate potato into a medium bowl. Add parmesan cheese and thyme, toss well. 

2. Line a sheet pan with a non stick mat or parchment paper and spray with cooking spray. 

3. Use a metal cylinder to form potato mixture into even circles on prepared pan. Place in oven for 20 minutes or until golden and crispy.
