Banana Fritters

Banana Fritter

  • 1/2 cup flour
  • 1 tablespoon dark brown sugar
  • pinch salt
  • 1/2 cup plain seltzer
  • 1 banana, coarsely chopped
  • powdered sugar for dusting
  • Oil for frying

  • deep fry or candy thermometer


Place oil in a pan until it is three inches deep. Heat the oil to 375. Line a plate with a paper towel and set aside.

Whisk together the flour, sugar and salt in a large bowl. Whisk in the seltzer. Stir in the banana.

Drop the batter by tablespoons into the hot oil. Be careful not to over crowd the pan, the fritters should be fried in small batches. Within a second or two the fritters should float to the top. If they do not gently shake the pan to unstuck them from the bottom. Fry the fritters until golden brown, approximately 1-2 minutes.

Transfer the fritters to the paper towel lined plate. Cook remaining fritters.

Dust the fritters generously with powdered sugar and serve immediately.
