Chicken Fiesta with Mango Salsa

Marinated chicken pan fried and served in a tortilla with fresh mango salsa will be your new favorite dinner, add it to the rotation and thank me later.

Ingredients

  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder or to taste
  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch wide strips
  • 2 tablespoons extra virgin olive oil
  • Mango Salsa
  • 6 (8-inch) whole-wheat tortillas
  • 6 leaves bibb lettuce, rinsed and dried

Mango Salsa

  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • 1 mango, pitted and peeled, diced
  • 1 avocado, pitted and peeled, diced
  • 1 red pepper, ribs and seeds removed, thinly sliced
  • 2 scallions, sliced
  • 1 small red onion, thinly sliced
  • Kosher salt

Preparation

1. In small bowl, combine cumin, paprika, salt, garlic powder, onion powder, and chili powder.

2. Rub over chicken fingers and set aside for 10 minutes.

3. Heat a large sauté pan, over medium-high heat, and add evoo.

4. Add chicken fingers, sauté for about 8 minutes, or until thoroughly cooked.

5. Place tortillas on a microwavable plate, cover with a damp paper towel, and heat for 30 to 60 seconds.

6. To assemble: Lay out tortillas on a work surface. Layer lettuce, chicken fingers and mango salsa on one half of each tortilla. Fold the other tortilla half over filling.

Mango Salsa

1. In a large bowl, whisk together lime juice, honey, and olive oil. Add mango, avocado, peppers, scallions, and onions and gently toss to coat. Season to taste with salt and pepper.
