who has time to shred potatoes?? i don't! this is a great shortcut recipe


  • 3 cups frozen hash browns, thawed
  • 3 Tbsp. grated onion
  • 3 stalks green onion, sliced
  • 2 Eggs, beaten
  • 4 tbsp. flour
  • 1 tsp. salt
  • 1 cup canola oil
  • 1/2 cup mashed potatoes flakes


1 In large bowl, combine all ingredients (not the oil)
2 Heat the oil in a large, heavy skillet. I like using an ice cream scoop to measure out the amount of latke I put on to the pan. Cook over medium heat until brown on both sides.
