Chocolate Gelato

Chocolate gelato homemade

Do you prefer gelato or ice cream?  

I prefer gelato.  The difference is in the amount of fat and often whether eggs are included. Typically gelato has less cream in favor of milk, which makes it lower in fat than traditional ice cream and that makes me like it even more.  Some gelato recipes do call for eggs, but I like the simplicity of leaving it out.  Instead the gelato is thickned with corn starch, like pudding. 

If you don't have an ice cream, just freeze in a bowl and it won't quite have the light and fluffy consistency but it will still taste great.

  • 3 cups whole milk
  • 4 ounces chocolate
  • ¾ cup sugar
  • 2 tablespoons cornstarch


1 Bring 2 cups milk to a simmer and remove from heat. Whisk in chocolate until melted.

2 Combine 1 cup milk with sugar and cornstarch in a separate bowl and add to hot milk.

3 Return to heat and cook on low heat for 10 minutes, whisking every couple of minutes. Allow to cool in refrigerator.

4 Once cold pour into ice cream maker and churn for about 30 minutes.
