I didn’t know this was a standard recipe, known to cooks of many countries. I received it via my sister’s friend, Jennie, all the way from Israel. I waited five years to get the precise measurements in this recipe, but it was worth it!

Ingredients

  • 1 10-ounce bag chopped onions (or 2 large onions, sliced)
  • 1 chicken about 3-1/2 pounds, cut into 8 pieces
  • 1 teaspoon garlic powder
  • ½  cup Coca-Cola
  • ½  cup ketchup
  • ½  cup apricot jam
  • 1 tablespoon soy sauce

Instructions

  • Preheat oven to 375℉. Lightly grease a 9 x 13-inch pan with non-stick cooking spray.
  • Place onions in prepared pan.
  • Rinse chicken and pat dry; arrange on top of onions.
  • Season chicken with garlic powder.
  • In a medium bowl, place Coca-Cola, ketchup, apricot jam and soy sauce, and mix well.
  • Pour Coca-Cola mixture over chicken and bake at 375℉ for 1 hour and 15 minutes to 1 hour and 30 minutes. Serve warm.

      The Brisket is really really easy but you have to make it the day before you want to serve it.
      Ingredients
      3lb piece of brisket
      1/2 jar of Mango Chutney
      1 can of full fat Coke

      1. Cut off as much fat from the brisket as you can
      2. Place the brisket into a roasting pan and spread the half jar of Mango Chutney over it
      3. Pour over the can of coke – it has to be full fat
      4. Cover the pan with tin foil
      5. Cook at 150 degrees centigrade for around 3 – 4 hours
      6. When it’s cooled down remove the brisket and slice it quite thin
      7. Put the sliced Brisket back in the pan with the gravy
      8. Put this in the fridge overnight
      9. Put it back in the oven around an hour before you want to eat it at 150 again
      10. Serve

    One of my favorite chicken recipes!! Easy to make and everyone loves it. I took the suggestion to cover the chicken for 1 hr, and found it was a good one.
    This is a staple in our home!

    I just made this delicious chicken and it came out great. However, I think that I would have left it covered for 1 hour and removed the cover for the last hour so that more of the flavoring would get into the chicken.
