Creamy Olive Oil Polenta

With all the time you saved making the Instant Pot Braised Pot Roast, there is very little excuse not to do a decent side dish and garnish, isn’t that right?! You can make this creamy side in your Instant Pot, or you can prepare it stovetop.

Make the chicken stock for this recipe in your Instant Pot and save even more time.

Always make sure to use a great quality extra virgin olive oil. We love Colavita!

Polenta

Creamy Olive Oil Polenta

Ingredients

  • 1½ cups cornmeal
  • 5 cups chicken stock or water
  • 3  tablespoons extra virgin olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  • Stovetop method: Simmer cornmeal, stock or water, evoo, salt, and pepper in a medium saucepan, stirring often, until creamy and no longer gritty, about 15 minutes.
  • Adjust seasoning with salt and pepper.
  • Instant Pot method: add cornmeal, stock or water, evoo, salt, and pepper to insert for Instant Pot. Set to pressure cooker and set timer for 15 minutes.
  • Adjust seasoning with salt and pepper.

    This is NOT how to cook polenta. Do not use this recipe. The results will not be good.

    Made this for shabbos, and did not come out creamy in an InstantPot. Needed to add more water.
