If there ever comes a time when I desperately need a kitchen staff it’s Passover. Not to be greedy, I’d simply settle for a sous chef. But since sadly, I see neither luxury in my future, I’m nominating my 2nd freezer for the job.
Stopping the holiday stress is all about helping yourself. Help me, help you, realize that you can lighten your load by cooking and freezing in advance.
A full freezer makes me so happy that I sometimes wrap my arms around the ice box. I respond to my kids shocked and quizzical stares like any sane, pre-Pesach, balabusta, “you’ll understand when you’re a mommy.”

I have the same question Jacquelyn does. I’m all for cooking ahead and freezing; I often do it during the year and especially during the summer for the busy holiday season in September. But in order to do that for Pesach, I would need to turn over my kitchen way in advance. As it is, I turn over one week prior to Pesach so I can cook and freeze some things. But in order to put a significant amount of Pesach dishes in the freezer, you would need a kitchen space that could be used for Pesach well in advance of the holiday.
Bruschetta is a great finger food.

Thank you for the great tips. I am wondering how you do this in terms of your kitchen being ready for Passover. I am new at keeping Passover. Do you just clean one part of your kitchen and fridge for the Passover utensils, pots, etc.? And then still use non-Passover items in a different part of the kitchen? I didn’t grow up keeping Passover, and it is hard to learn the tricks. 🙂
I guess I would have to say Popcorn is my favorite finger food – does that count? The next thing that comes to mind is a delicious cheese ball that is wonderful spread on crackers – cream cheese, pineapple, green peppers, spices, and rolled in chopped pecans. For some reason the combination of pineapple and green pepper tastes like tuna fish to me – but it is delicious.
