Easy Cheese Blintz Souffle
Without making individual blintzes, this easy cheese blintz souffle is a nice dish to serve for brunch or any dairy meal.

Ingredients
Batter:
- 2 sticks melted butter
- 1/2 cup sugar
- 2 eggs, beaten
- 1 cup flour
- 3 teaspoons baking powder
- 1/2 cup milk
- Pinch of salt
- 1 teaspoon vanilla
Filling:
- 1 pound cream cheese
- 1 pound cottage cheese
- 2 eggs, beaten
- 1/2-1 cup sugar
- Pinch of salt
- Juice of 1 lemon
Preparation
Batter:
1. Mix batter in 1 bowl.
Filling:
1. Mix filling in another bowl.
Assemble:
1. Pour 1/2 batter in a 9 x 13 inch casserole dish.
2. Pour filling over batter.
3. Pour remaining batter over filling.
4. Bake 45 minutes in preheated 300 degree oven.
