Easy Corny-Dog Muffins

Perfect for a packable lunch or family outing, these corny-dog muffins are easy for little hands to help prepare and fun for the whole family to eat. 

Make sure to use a great quality extra virgin olive oil. We love Colavita!

  • 1¾ cups all-purpose flour
  • 1 cup cornmeal
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1¼ cups almond milk or coconut milk
  • ½ cup extra virgin olive oil, such as Colavita
  • 2 eggs
  • 4 hot dogs, each cut into thirds


Preheat oven to 350°F. Line muffin tin with paper cups.

1. Whisk flour, cornmeal, sugar, baking powder, baking soda, and salt together and set aside.

2. Whisk almond milk, evoo, and eggs together. Whisk wet ingredients into flour mixture until smooth.

3. Divide batter between muffin cups. Place hot dog in each muffin so it stands up.

4. Bake at 350°F for 15 to 20 minutes or until a toothpick inserted comes out with only a few moist crumbs.
