Egg Salad Sandwiches with Cucumber and Basil

Ingredients
- 6 hard boiled eggs, sliced
- 3/4 cup thinly sliced cucumber
- 1 small shallot, thinly sliced
- 1/4 cup fresh basil leaves
- 1/2 cup light mayonaisse
- salt and pepper to taste
- 12 slices whole grain bread
Preparation
Gently combine mayo, shallot, salt and pepper with sliced eggs. Lay out a slice of bread and top with basil leaves and cucumber slices, then top with a large spoonful of egg mixture. Lay other slice on top and slice sandwich in half - enjoy.
