MATZO FATTOUSH SALAD

A fattoush salad is a Lebanese answer to stale pita. This version uses crunchy matzo in place of pita with lots of greens and a simple tangy dressing.

Ingredients

  • 2 cups chopped pitted dates 
  • 5 cups chopped romaine lettuce 
  • 1 cup raisins 
  • 2 cups grape tomatoes cut in half 
  • 2 large shmura matzo rounds 
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh chopped flat-leaf parsley 
  • Kosher salt 
  • Freshly cracked black pepper 

Dressing

  • ⅓  cup balsamic vinegar 
  • 2 tablespoons honey 
  • ½ cup extra virgin olive oil
  • Kosher salt 
  • Freshly cracked black pepper 

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Brush matzo rounds with evoo and sprinkle with parsley, salt, and pepper.
  • Toast matzo at 350°F for 5 to 7 minutes. Break matzo into 2-inch pieces.
  • In a small jar, shake vinegar, honey, evoo, salt, and pepper until emulsified.
  • Assembly: Toss dates, romaine, raisins, tomatoes, and toasted matzo together. Drizzle with vinaigrette and serve on a platter or bowl.
