A fattoush salad is a Lebanese answer to stale pita. This version uses crunchy matzo in place of pita with lots of greens and a simple tangy dressing.

Fattoush-ish Salad

Ingredients
- 2 cups chopped pitted dates
- 5 cups chopped romaine lettuce
- 1 cup raisins
- 2 cups grape tomatoes cut in half
- 2 large shmura matzo rounds
- ¼ cup extra virgin olive oil
- 2 tablespoons fresh chopped flat-leaf parsley
- Kosher salt
- Freshly cracked black pepper
Dressing
- ⅓ cup balsamic vinegar
- 2 tablespoons honey
- ½ cup extra virgin olive oil
- Kosher salt
- Freshly cracked black pepper
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Brush matzo rounds with evoo and sprinkle with parsley, salt, and pepper.
- Toast matzo at 350°F for 5 to 7 minutes. Break matzo into 2-inch pieces.
- In a small jar, shake vinegar, honey, evoo, salt, and pepper until emulsified.
- Assembly: Toss dates, romaine, raisins, tomatoes, and toasted matzo together. Drizzle with vinaigrette and serve on a platter or bowl.
