Garlic and Olive Focaccini–Diabetic Version

  • 1 lb. Prepared pizza dough, divided into 4 (4 oz.) balls
  • 2 Tbsp. Pureed roasted garlic
  • 1 cup California Ripe Olives, halved
  • 1/2 cup shredded Asiago cheese
  • 2 tsp. Chopped rosemary
  • 2 tsp. Chopped thyme
  • Black pepper, to taste



1 Shape each piece of pizza dough into a 5-6 inch disc. Place onto a well greased baking sheet.

2 Spread 1/2 tablespoon of garlic puree on each, then dot with 1/4 cup of California Ripe Olives.

3 Sprinkle with 2 tablespoons of asiago cheese and a 1/2 teaspoon of rosemary and thyme, then season with black pepper to taste.

4 Allow to rest in a warm place for 30-60 minutes, then bake in a 400 degree oven for 15-20 minutes until lightly golden.
