
Garlic Meatballs with Lemon Sauce

Ingredients
- 1.5 pound extra-lean ground beef
- 3 slices of bread torn into soft crumbles
- 4 garlic cloves peeled and minced
- 2 tablespoon fresh parsley leaves chopped
- 2 tablespoon fresh mint leaves chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- ground black pepper to taste
- 2 large eggs
- 8 ounce tomato sauce
- 2 lemons need the grated lemon rind
- .25 cup lemon juice
- salt to taste
- ground black pepper to taste
- 1 tablespoon fresh mint leaves minced
Instructions
- Combine the ground beef, bread crumbs, garlic cloves, parsley, mint, paprika, salt, pepper, and 2 eggs together in a bowl. Form walnut-sized balls. Place balls inside of slow cooker.
- Combine the tomato sauce, lemon rind, lemon juice, salt, pepper, and mint leaves. Pour sauce over meatballs. Cover and cook on low for 4-6 hours. Serve with rice.
