Gluten Free Chocolate Chip Cookie Bars

For the nuts the 6 oz. or 7oz. packages should both work fine.

  • 2 cups sugar
  • 2 sticks margarine
  • 2 eggs
  • 2 pkg. vanilla sugar or 1 1/2 tablespoons
  • 1 6 oz. pkg ground walnuts
  • 1 6 oz. pkg ground filberts
  • 2 cups potato starch
  • 1 pkg chocolate chips


In a large bowl, mix sugar with margarine, adding eggs one at a time until creamy.  Add vanilla sugar, nuts, starch, mixing well. Stir in chocolate chips until thoroughly
mixed. Refrigerate dough for several hours.  Then pat it down on a 17 X 12 cookie sheet. Bake at 350 degrees for 15-20 minutes. Cool then cut into bars, store in a Tupperware airtight container for optimum freshness.
