Gluten Free S'mores

gluten free s'mores bars

Make your own S'mores with gluten free matzo crackers, you will be amazed at what you can do with them.

  • 8 ounce box gluten free crackers
  • 1/3 cup brown sugar
  • 2 teaspoon cinnamon
  • 4 tablespoon coconut oil, melted
  • 2 tablespoon unsweetened almond milk
  • 1 1/2 cup dark chocolate chips
  • 3 tablespoon unsweetened cocoa powder
  • 1 cup canned light coconut milk
  • 3.5 ounce mini marshmallows


Preheat oven to 375F

Combine crackers, brown sugar and cinnamon in the food processor. Pulse until the crackers turn into fine crumbs. Add coconut oil and almond milk and pulse a few more times until well combined

Press cracker mixture into a 9x9 square non stick pan. Bake at 375F for 12 to 15 minutes

In the meantime, prepare the chocolate layer. Place chocolate chips and cocoa powder in a large heat proof bowl. Bring coconut milk to a simmer and pour over the chocolate, whisking constantly until it melts completely. Set aside to cool slightly

Pour chocolate over cracker crust. Arrange marshmallows on top. Place the pan back in the oven and broil for 45 seconds to a minute, until the marshmallows start to brown (keep an eye on it the whole time!)

Refrigerate for at least 3 hours
