Green Tomato Pie

  • 1 cup brown sugar
  • 3 tablespoon all purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon grated nutmeg
  • 2 teaspoon grated fresh lemon peel
  • 1 pound green tomatoes
  • Pastry for 2-crust pie
  • 1/2 cup raisins
  • 2 tablespoon butter
  • 2 tablespoon lemon juice


  1. Preheat the oven to 425 degrees.
  2. Mix the brown sugar, flour, cinnamon, salt, nutmeg and lemon peel in a bowl.
  3. Slice the tomatoes 1/4-inch thick.
  4. Roll out half the dough and fit into a 9-inch pie pan.
  5. Place some of the tomatoes on the crust, then sprinkle with some of the sugar mixture and raisins. Repeat in layers until all the tomato slices, sugar mixture and raisins have been used.
  6. Cut the butter into small chunks and place on top of the tomatoes.
  7. Sprinkle the lemon juice on top.
  8. Roll out the second piece of dough and place it over the filling, press the edges together and crimp to seal the dough together.
  9. Make several slits in the dough to let steam escape.
  10. Bake the pie for 25 minutes.
  11. Reduce the heat to 350 degrees and bake for another 20 minutes or until the crust is golden brown.
