- 1/2 lb jumbo asparagus
- 2-3/4 inch thick slices of prime rib
- 1-2 tsp. lemon pepper
- 1-2 tsp. minced fresh thyme, sage
- 1 small tomato, sliced in half, zest of 1 lemon
- Vinaigrette: 4 Tbsp. olive oil
- 1-2 tbsp. lemon juice
- 1/8 tsp. salt
- 1/4 tsp. ground pepper
1 Mix Vinaigrette and store in a cool place.
2 Steam jumbo asparagus, let cool and place on a plate. Season prime rib and grill to appropriate doneness.
