Healthier Pumpkin Muffins

These muffins are not sweet, but they taste great, let yourself get used to enjoying less sugar in your diet.

If you want to add some 70% or higher dark chocolate, add ¼ cup for an additional 20 calories per muffin.

Ingredients

  • ⅓ cup oil
  • ½ cup date honey
  • 2 eggs
  • 1 cup pumpkin puree
  • ¼ cup milk of choice
  • 1 ¾ cup flour
  • ½ tsp salt
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin spice mix
  • 1 teaspoon vanilla

Preparation

1. Preheat oven to 325℉ and spray a 12 cup muffin cup tray with cooking spray.

2. In a large bowl, beat the oil, date honey, eggs, pumpkin, and milk together. Add flour, salt and spices and mix until just combined.

4. Divide batter evenly between muffin cups. Bake for 25 minutes.
